Itโ€™s the new year, but somehow everyone still needs breakfast. ๐Ÿ˜ฌ๐Ÿ˜‚ My kids have been making @backinthedaybakery buttermilk biscones with me since they were peanutsโ€”add some chocolate chips and youโ€™ve got yourself a party! ๐ŸŽ‰ XX
.
@backinthedaybakery Buttermilk Biscones
Ingredients:
โƒ 1 1/2 cups all-purpose flour
โƒ 1 1/2 cups cake flour
โƒ 1/4 cup sugar
โƒ 2 Tbsp baking powder
โƒ Salt
โƒ 1/4 tsp ground cardamom (I used cinnamon ๐Ÿค—)
โƒ 1/2 lbs (2 sticks) cold unsalted butter, cut into 1/2 in pieces
โƒ add-ins: I used 1/2 cup chocolate chips ๐Ÿ’ƒ๐Ÿป, you can also use 1/2 cup fresh/frozen blueberries or whatever you like.
.
Directions:
1. Preheat oven to 375ยบ. Line two baking sheets with parchment paper.
2. Whisk together flours, sugar, baking powder, 3/4 tsp salt and cardamom/cinnamon until combined. Using a pastry cutter or two knives (or your hands! ๐Ÿ™‹๐Ÿปโ€โ™€๏ธ), work in the butter until you have various-size pieces ranging from sandy patches to pea-size chunks and some larger bits as well. Gently stir in any add-ins.
3. Gradually pour in buttermilk and gently fold the mixture until there are no bits of flour remaining in the bottom of the bowl. If the dough seems dry, add a little more buttermilk until it is moist and slightly sticky.
4. Using your hands, gently pat the dough until it resembles a loaf of bread. Scoop mounds of dough on to prepared baking sheets, arranging about 1 inch apart.
5. Bake for 20-25 mins, rotating sheets halfway through. Remove from oven and let cool for 10 minutes.
6. Yum.
